**NUTRITION & RECIPES**
Source: "The New Farm Vegetarian Cookbook"
3 cups tofu
1/4 cup lemon juice
1/2 cup oil
1 cup sugar (I would use a good substitute)
1 teaspoon vanilla
1 pinch salt
1 1/2 cups graham cracker — crushed
1/4 cup oil
1 tablespoon sugar — (optional)
Combine ingredients in a blender or processor until creamy, adding a little
water at the end if needed to make tofu smooth. Pour into crust and Bake
at 325F for 50 minutes until set in the middle. Cool and top with fresh
strawberries, drained crushed pineapple, sliced kiwi, sweet cherries or
blueberries. Mix crumbs, sugar and oil and press into the bottom and sides
of a 9" pie plate. This crust can be baked, cooled and filled with a
pudding recipe. Bake for 10 to 12 minutes at 325F. You need not pre-bake
it for cheesecake. The recipe doesn’t specify what kind of tofu, but using
2 pkgs (12 oz) of firm silken tofu with good results.

DANIEL – A LESSON IN BEING DIFFERENT!

Daniel was taken from his home in Judah and exiled. His future was very much
in doubt. Daniel had all the traits that qualified him for service in the
king’s palace. Daniel’s greatness is evident when he refuses to give up his
convictions. He applies God’s will to his life and resisted changing the
good habits he had formed. Both Daniel’s physical and spiritual diets were
an important part of his relationship with God. Daniel reminds us that we
should prayerfully live out our convictions in everyday life and trust God
for the results.

**FUNNY OF THE DAY**
Laughter is Good Medicine!
2 DROPS EVERY 4 HOURS
My family physician told me of an incident that actually happened to him
back in the early days of his practice.
He said a woman brought her baby to see him, and he determined right away
that the baby had an earache. He wrote a prescription for ear drops. In the
directions he wrote, "Put two drops in right ear every four hours" and he
abbreviated "right" as an R with a circle around it.
Several days passed, and the woman returned with her baby, complaining that
the baby still had an earache, and his little behind was getting really
greasy with all those drops of oil.
The doctor looked at the bottle of ear drops and sure enough, the pharmacist
had typed the following instructions on the label:
"Put two drops in R ear every four hours."
