Hello Everyone,

Hope you all had a nice holiday! We did, we went to visit my family and our son in Oklahoma City. After coming back home, we changed our website to a new hosting company. This was a major change and we are still working out all the changes.

We actually changed from a UNIX environment to a Windows server environment. This has been a big learning curve for us and many of our programs that ran on UNIX won’t work so we are in the process of finding new ones or converting them.

Needless to say, we have been busy and that is why I am late in getting this ANS issue out to you. I am sorry for the tardiness and I hope to be more timely in the coming months of 2004.

TSUKUBA, Ibaraki — Peeling apples helps activate the brain, according to an experiment conducted by a governmental research institute.

Cutting the skin of the fruit apparently stimulates part of the frontal lobe that controls logical thinking, imagination and judgment.

Researchers at the Tsukuba-based National Food Research Institute said the complicated actions of controlling a dangerous knife while moving the apple stimulates the prefrontal cortex.

Makes about twenty 1-1/4-inch balls

* 1 cup salted natural peanut butter
* 1/3 cup mild honey, such as clover or orange blossom
* 2 teaspoons carob powder or unsweetened cocoa
* Big pinch of cinnamon
* 2/3 cup raisins
* 2 tablespoons plus 1/2 cup unsweetened shredded coconut (available at health food stores) or sweetened flaked coconut

If you are starting a new jar of peanut butter, make sure you stir it well to mix any separated oil back in.

In a large mixing bowl, mix the peanut butter, honey, carob powder, and cinnamon with a wooden spoon until blended. Stir in the raisins and 2 tablespoons of the coconut. Refrigerate the mixture for 1 to 2 hours if possible.
