At night, when the sun goes down there is a chill that settles and it makes
me think of eating chili. I went searching for a recipe and the one I

NURSING HOMES TO GET SAFETY GUIDELINES – By LEIGH STROPE

WASHINGTON – Nursing homes are the first industry to get government
guidelines that suggest ways to reduce workplace injuries, replacing the
legal requirements Congress rolled back two years ago after businesses
complained they were too burdensome and costly.

The Occupational Safety and Health Administration (news – web sites)
guidelines were released Thursday and urge nursing homes to limit manual
lifting of patients and illustrate 22 options that would help their workers
avoid strain and repetitive-stress injuries from lifting and repositioning.

Ergonomics-related injuries account for about a third of all 1.7 million job
injuries annually. Nursing aides, orderlies and attendants are most at risk,
just behind truck drivers.

“Nursing home workers are suffering too many ergonomics-related injuries,”
said OSHA Administrator John Henshaw. “But the experiences of many nursing
homes provide a basis for taking action now to better protect these
workers.”

A disclaimer says the guidelines are “advisory in nature and informational
in context. They are not a new standard or regulation and impose no new
legal requirements.”

Labor unions, which fought for government regulations requiring employers to
make changes to work stations, said some companies won’t improve conditions
unless forced.

Any industry changes will be “very uneven,” said Andy Stern, president of
the Service Employees International Union, which represents about 110,000
nursing home workers.

“We haven’t seen any history as to why employers who haven’t done the right
thing to date are going to now, because of a voluntary guideline, change
what is very dangerous conditions for workers,” he said.

Health services jobs are among the most dangerous, with an injury and
illness rate of 7.2 per 100 workers in 2001, according to the Bureau of
Labor Statistics. Manufacturing jobs ranked higher, posting an overall rate
of 8.1 per 100 workers.

Nursing home operators said the guidelines are realistic, balancing
patients’ needs with workers’ safety.

In the past 20 years, obesity among 6- to 11-year-old children has risen 54
percent, according to John Hopkins Bayview Medical Center. Fat kids often
suffer socially and have a greater risk of developing conditions like heart
disease and diabetes.

You can help your children avoid weight problems by following these guidelines:

* Never put your children on low-calorie deprivation diets. By
restricting calories, you can stunt their growth. Rather, lower your child’s
fat intake, but maintain calories by increasing carbohydrates found in
fruits, vegetables, cereals, breads, and pasta.

* Remove temptations that may lie around the house. Don’t leave candy
dishes or cookie jars on coffee tables or kitchen counters.

* Don’t use desserts and candies as rewards.

* Have family meals. Set a good example by eating a wide variety of
foods. Teach your child to eat slowly.

* Make mealtime pleasant. Don’t use this time for criticizing or scolding
your child.

* Build your child’s self-esteem: listen to her and show her that you
love and accept her — regardless of her weight.

HELPING KIDS COPE WITH WORRIES OF WAR

Some children jump at the wail of a siren or the roar of an airplane
overhead, wondering if it could be an enemy attack.  

Some can’t sleep at night because of fears of war and terrorism.

Others struggle to puzzle out why their country has invaded another country
when so many people protested against the war.

Psychologists and other experts say these reactions are typical of many
children of a generation suddenly thrust into a collective state of anxiety
as the war with Iraq (news – web sites) intensifies.

Some younger children are blessed with blissful ignorance and the magical
power of illusion. Says New York City child psychologist Patricia Saunders:
“I have one kid who’s 7 saying, ‘I’m not worried, because Spider Man is
gonna come help us.'”

Perhaps parents could use some superhero powers at a time like this. Not to
scale buildings, but to help their children navigate unfamiliar emotional
terrain: to know just what to say (and not to say), to ease anxiety, to help
kids cope with the unthinkable.

“Kids’ anxiety has been through the roof,” says Saunders, director of the
Manhattan Mental Health Center. “Kids are bewildered. They’re wondering if
anybody in their family is going to get hurt or if there’s going to be
another 9/11.”

How parents can best respond depends, of course, on the age of the children
as well as their temperament, interest and knowledge of war and possible
terrorism, experts say.

Some, like Richard Gallagher, director of the Parenting Institute at the New
York University Child Study Center, say preschool-age children should be
shielded from news of the war and possible terrorism.

But that’s not always possible, with ubiquitous media coverage making even
some very young children well aware of the war in Iraq and possible
terrorism threats at home.

NUTRITION IS A CHOICE

VEGETARIAN CHILI WITH RICE

* 12 ounces dry beans — kidney, chili, or Jacob’s Cattle, soaked*
* 2 teaspoons tamari soy sauce
* 1/4 cup water
* 3 small onions — chopped–about 1 cup
* 3 small carrots — chopped–about 1 cup
* 3 small peppers — chopped–about 1 cup
* 5 tomatoes — peeled and coarsely chopped–about 2 cups
* 1 large can tomato juice–no salt added if possible
* 1/2 teaspoon cayenne pepper
* 1 1/2 teaspoons dried cumin powder
* 1/2 teaspoon black pepper — or to taste
* 1 1/3 cups brown rice-uncooked

In a soup pot, heat water and tamari. When water just begins to boil, add
onions, carrots, and peppers. “Saute” until vegetable start to soften. Add
tomatoes and cook 3 minutes longer. (If fresh tomatoes are out of season
used canned and skip the 3 minutes additional cooking.) Add remaining
ingredients and enough of the been cooking liquid to give to appropriate
chili consistency. Bring to the boil. Reduce heat and cover. Simmer at least
50 minutes to cook the rice. You can cook much longer–even all day in a
crock pot.

8 large servings.

*Soaked overnight and cooked with 1/2 teaspoon chili powder and 1/4 teaspoon
dried chili flakes under 15 lbs pressure for 7 minutes– reserve cooking
liquid.

A guy was lonely and so he decided life would be more fun if he had a pet..
So he went to the pet store and told the owner that he wanted to buy an
unusual pet.

After some discussion, he finally bought a centipede (100-legged bug) ,
which came in a little white box to use for his house. He took the box back
home, found a good location for the box, and decided he would start off by
taking his new pet to a restaurant to have a meal.

So he asked the centipede in the box, “Would you like to go to Frank’s with
me and have a bite to eat?” But there was no answer from his new pet.

This bothered him a bit, but he waited a few minutes and then asked him
again, “How about going out and having a snack with me?”

But again, there was no answer from his new friend and pet. So he waited a
few minutes more, thinking about the situation. He decided to ask him one
more time – this time putting his face up against the centipede’s house and
shouting,he said, “Hey, in there! Would you like to go get some food with
me?

A tiny little voice came out of the box:……………

“I heard you the first time! I’m putting on my shoes.”
