Your encouragement has truly blessed my heart.
It's already May. Happy May Day! The fine Spring weather we've been having in
Alabama has been wonderful. I've taken advantage of the hammock in our back woods
on many balmy and breezy days. Watching the leaves dance to the "tune"
of the wind is incredible when you're looking up from beneath the branches. Your
mind opens up when you gaze into a vast beautiful blue sky. As the clouds pass
by you can almost transmit your troubles to them for transport out of this universe.
Wouldn't it be nice to be able to ship daily cares away at the end of each day....not
to be remembered or worried about ever again? I believe there is a way to accomplish
it......and I'm planning on discovering the answer during one of those afternoons
in the hammock.
It's a sure motivation for getting your work done fast. That's the way the days
were when I grew up in the 50's. People got their work done and then they relaxed
and visited with one another. That's a missing link in our society today....relationships
and taking time for them.

FISH OIL MAY EASE DEPRESSION
(ABC News)
A recent study has found more to cheer about. Researchers at Harvard University's
McLean Hospital studied 30 patients with bipolar disorders, characterized by chronic
bouts of mania and depression. Half of the patients received fish oil supplements,
and half received a placebo. It was found that the fish oil patients showed marked
improvements over a four-month period. Lead researcher Andrew Stoll speculates
that the omega-3 EFAs in the fish oil are able to block the abnormal signals in
the brain that are suspected to be present in bipolar disorders. While the study
was small, it has been hailed as a landmark for its investigation into the effect
of omega-3 fatty acids on the brain. Unfortunately, it seems doubtful that any
drug company will fund fish oil studies, as natural products can't be patented
and so won't bring in profits.

MAGNESIUM
This is a critical mineral because it is becoming more and more evident that deficiencies
are high on this one. It was assumed that we should balance the ratio of magnesium
to calcium with calcium being twice as much as magnesium. Recent research has
shown that it should be equal. Some of the deficiency symptoms of magnesium are:
twitching (eyes, or muscles on arms and legs), chewing on things (pencils, must
have gum or hard candy), restless sleep, waking up about 2-3 am and not being
able to go back to sleep, bruxism (grinding teeth), and irritability.

FLUORIDE
Fluoride is a cumulative poison and while the body excretes about 50% of the fluoride
we ingest, the rest is stored, mainly in the bones. Less than 2% of Europe's population
now has fluoridated water.
Sweden and West Germany
in 1971, Norway in 1975, Holland in 1976 and Denmark in 1977 banned fluoride.
France rejected fluoridation in 1980. In the UK, 10% of the people still have
fluoridated water.

who have ingested 10-20 mg of fluoride per day for 10 to 20 years.

THREE BEAN PASTA
Serves 4-6
1 pound noodles -- uncooked
1 15-ounce can kidney beans -- rinsed and drained
1 15-ounce can chickpeas -- rinsed and drained
1 cup frozen green beans -- thawed
1 small red onion -- chopped
1 red bell pepper -- seeds and ribs removed, chopped
3 tablespoons Dijon mustard
2 tablespoons vegetable oil
3 tablespoons red wine vinegar
3 tablespoons chopped fresh parsley
Prepare pasta according to package directions; drain. Rinse under cold water
and drain again. In a large bowl, stir together the pasta, kidney beans,
chickpeas, green beans, onion and bell pepper. In a small bowl, stir
together the remaining ingredients. Toss pasta with dressing and serve.
