HEALTH CARE NOT Y2K READY

According to the Senate's Special Committee on the Year 2000 Technology Problem, the health care industry was cited as the least prepared for the year 2000. For example, "64% of the 6,000 hospitals in the U.S. still have serious year 2000 problems," said Sen. Christopher Dodd (D-Conn.)

From Chet Day: "One of the Senate Y2K reports recently shared the news that over 90% of doctors had done nothing to prepare for the Year 2000 computer date problem. So if you're still relying on a physician to take care of your health, I strongly encourage you to get your doc moving on fixing his hardware and software. Even better, take charge of your own health by changing the way you eat and live and then you won't need doctors again."

Donna's Note: I'd say this puts Herbal Remedies in the news since we may have to rely on them if the medical care system as we know it goes down for a period of time. Learn all you can and don't depend on somebody else to take care of your health.

CELL PHONES & HIGH BLOOD PRESSURE

Researchers now say that using cellular phones may actually cause a temporary increase in blood pressure according to a study published in the Lancet. The researchers found that 35 minutes of exposure to the electromagnetic fields generated by the phones increased resting blood pressure between 5 and 10 mm Hg--an increase that could be dangerous for someone with already high blood pressure. Researchers suspect that the elevations in blood pressure care caused by a temporary constriction of blood vessels in the side of the head nearest the phone.

**VITAMINS IN THE NEWS**

CALCIUM AND COLON CANCER

A new study provides further evidence that calcium may play a key role in reducing the risk of colon cancer, the third leading cause of cancer death and new cancer cases in both men and women in the United States. The study, based on a randomized, double-blind clinical trial was published in the January 14, 1999, issue of The New England Journal of Medicine. Researchers noted that it demonstrated that people who had previously had a colorectal adenoma (a non-cancerous tumor which is a precursor to colon cancer) removed and who then consumed additional calcium were less likely to develop new tumors. These findings are consistent with the results of a number of previous studies.

**FEATURED RECIPES**

BLACK FOREST CAKE
by Donna Watkins

2 c. whole wheat pastry flour
1 c. carob powder
1 t. baking soda
1 t. baking powder
1-3/4 c. Sucanat (natural sugar)
15 oz. can sweet cherries, drained
12.3 oz. silken tofu (extra firm, drained)
2/3 c. pitted prunes (steamed in 1/4 c. water and mashed)
1 c. strong-brewed Herbal Beverage
2 t. vanilla extract
1/3 c. walnut or pecan pieces

In large bowl, mix first 5 ingredients well and set aside. In blender, blend next 5 ingredients till smooth. Fold into the dry ingredients along with nuts. Turn into oiled Bundt pan, and bake at 350 degrees for 40 minutes or until a toothpick inserted comes out clean. Cool 10 minutes and then invert onto a plate and allow to cool.

Glaze:
3 T. arrowroot or tapioca flour (or cornstarch if necessary**)
1/4 c. carob powder
2 T. Sucanat
3/4 c. warmed honey

In small bowl, stir together the first 3 ingredients and then whisk the honey into the carob mixture until smooth. Drizzle onto the cooled cake.

** if you use cornstarch, you'll need to cook the icing after mixing it together, until it boils and additional 3 minutes. Wait for it to cool a bit until it's the right consistency for drizzling on cake.
