A NOTE FROM RANDAL

Hello Everyone,

Last issue I made an incomplete statement. This mistake was lovingly
brought to my attention. This is in regards to my statement regarding
capsicum being stronger than cayenne. In most cases, capsicum and cayenne
are considered the same substances. There are different genera (means the
plural of genus) when it comes to the plant capsicum.

My comment was referring to the cayenne pepper you can buy in the grocery
stores. I went to our local store and looked at the cayenne pepper labels
and none of them listed the genera of the plants used.

Therefore, I would not be able to recommend just any cayenne red peppers to
stop the bleeding like it did for me when I cut my leg with the chain saw.
I actually used Nature's Sunshine capsicum to stop my bleeding. They have
on the label "Capsicum annuum" for the genus name.

Please forgive me for not giving you the clarification that I gave above.

RIGHT COOKING OIL KEY TO AVOIDING TRANS FATS

CHICAGO (Reuters) - Former professional figure skater Dawn Mannina still
exercises daily but recently has been paying more attention to eating
low-fat, healthy foods to keep her weight down.  

"I usually cook with olive oil as opposed to corn oil," said Mannina, 40,
who still skates occasionally in ice shows. "And I'm more conscious of the
kinds of fats I eat."

Her search for low-fat cooking ingredients reflects that of many Americans
as rising obesity in the United States has turned attention to an overlooked
but widespread source of dietary fat: vegetable oils.

Until recently, many consumers were unaware that food processing can turn
many of the most popular cooking oils into ticking time bombs for arteries.

Those little bombs are "trans fats," which the government has deemed
dangerous enough to require labeling in U.S. food products beginning in
2006.

RITALIN 'COCAINE PROPERTIES' MAY LEAD TO LATER DRUG ABUSE

A medicine regularly taken by millions of hyperactive children has similar
properties to cocaine and could encourage drug abuse in later life, New
Scientist magazine said Thursday.

Methylphenidate, better known as Ritalin, is the leading treatment for a
neurological condition known as attention deficit hyperactivity disorder
(ADHD), which prevents children from concentrating on a task for more than a
few seconds.

New Scientist said growing concerns over the long-time effects of the drug,
a stimulant that works by making the neurotransmitter dopamine more
available in the brain, have put it on the agenda for the U.S. National
Institutes of Health conference on ADHD, scheduled for November.

A 1995 study by Nora Volkow, director of nuclear medicine at the Brookhaven
National Laboratory in Upton, New York, found that Ritalin's properties were
very similar to cocaine. Volkow said there was no evidence of a link between
Ritalin and cocaine abuse but added 10 to 30 percent of cocaine addicts take
it because they have ADHD.

"When we give them Ritalin, the cocaine problem is resolved," she told New
Scientist. Another study by Susan Schenk, a psychopharmacologist at Texas
A&M University in College Station, and Nadine Lambert, a developmental
psychologist at the University of California at Berkeley, followed the
progress of 5,000 children with ADHD from adolescence into early adulthood.

In a paper to be published in October, Lambert argues that children on
Ritalin are more likely to smoke as adults. Other data presented by Schenk
suggested that they are three times more likely to develop a taste for
cocaine. Other experts were sceptical. Alan Zametkin, a psychiatrist at the
National Institute of Mental Health near Washington D.C., said he believed
stimulants actually reduce the risk of drug addiction.

"My theory is that stimulant use allows kids to be more successful and
therefore they develop fewer antisocial behaviors," Zametkin told New
Scientist. "So it's less likely they'll become drug addicts."

BROCCOLI BAKE

Recipe By :Vegetarian Times Complete Thanksgiving Cookbook

Serving Size : 8

* 6 cups broccoli florets, loosely packed
* 1 teaspoon salt
* water, to cover
* 3/4 cup lowfat milk or rice milk
* 2 tablespoons cornstarch
* 1 tablespoon Dijon mustard
* 1/2 teaspoon salt and freshly ground black pepper
* 1 cup cheddar or cheddar-style soy cheese, grated
* 1/2 cup soft bread crumbs
* 1 tablespoon olive oil
* 1 tablespoon Parmesan or Parmesan-style soy cheese, freshly grated


Preheat oven to 350° F. Place broccoli and salt in a covered saucepan with
water just to cover. Bring to rolling boil over high heat. As soon as
broccoli boils, remove from pan and drain in a colander, reserving cooking
liquid.
